The window which you cracked is over 300 years old. (identifies the window)

This is wrong. It should be: The window that you cracked is over 300 years old. It is a restrictive clause which defines the noun so it should be 'that'. A nonrestrictive clause describes so you use ',which'.

You've described perfectly the difference between ", which" and "which"...well, nearly.

"That" and "which" are interchangeable, but "that" and ", which" are not.
