" I think " = " I'm unsure"?

If I use the phrase " I think I can go this way or I think we've gone as far as we can this way"; Isn't that saying the same thing as " I'm unsure". In both phrases isn't the term " I think " another way of saying unsure/uncertainty?

Yes, it does to an extent, but it's not clear. "I think" also carries a strong connotation of "I'm telling you this politely..." If you want to make the uncertainty clear, use the word uncertain.
