apostrophes show possession for words ending with hissing sounds ?

Picked up the below line from

Leave the mouse's dinner alone

As per Wren martens..
For words having hissing sounds.. we omit the "s"
Examples:

Justice' sake
Moses' laws


Shouldn't be similarly mouse' dinner?

In a word, no. Justice' is wrong too, I'd say.
