How are you supposed to make saying "my father's father's father" grammatically correct?

If I can see what you mean, there are some simpler ways to express the quoted saying:
The simplest -- "my great-grandfather"
Next -- "my grandfather's father"
Or -- "the father of my grandfather" (grammatically correct if followed by a clause, e.g. "...of my grandfather, who...")
Eventually, to make it complicated -- "the father of my father's father".

It's more handy to say "a shoemaker" than "a man who sews pieces of leather to make things that people put on their feet". And that's what vocabulary is all about.
