I can see a case for both here. And, I am 49/51 on it. Imagine it were Innovative Paint Solutions. If you consider the words Innovative and Paint as adjectives modifying Solutions, then it cannot be Paints. However, if you consider the words Innovative Paints to be a compound adjective modifying Solutions, then Paints would be fine. Sometimes, it's about messaging as well as grammar. I think Coatings is best. If some grammar pedant attacks, you tell them it's a compound adjective.
