Here's a good version:

His son married a Spanish woman whom he met on the Camino, and he subsequently left the United States to live with her in Spain.

First, they are both grammatically okay, the choice being one of style level. When the relative pronoun is object of the verb, as it is in your example, both cases are found, but accusative "whom" is formal, while nominative "who" is preferred in conversational English by most people.
