Can you use but instead of and when listing things.

For example: We went hiking, we went swimming but we should have gone shooting instead.


Is that Grammatically and punctuated correctly?

You can, but you have three main clauses in your example, so you must use a heavier punctuation mark than a comma to separate the constituents; semi-colons will do:

"We went hiking; we went fishing; but we should have gone shooting instead".


An alternative and much more natural way of putting it would be:

"We went hiking and fishing, but we should have gone shooting instead".
