Modern word processors mean that it is no longer necessary, but it was required (considered easier on the eye) with the old typerwriters, and the habit has stuck.
Many people (including me) still like to see two spaces after a full stop (I'm English), but there is no longer a good reason for it.
In sum, if you have a pedantic boss who likes two spaces, then you're stuck with it it seems.
