Chocolate Cake with Chickpeas
1 1/2 c. semi sweet chocolate chips
15 oz can of chickpeas
4 eggs room temperature
3/4 c sugar
1/2 tsp baking powder
1 tsp vanilla
1 tsp ground cardamom
1/2 c semi sweet chocolate chips
1/4 c heavy cream
1/4 tsp cardamom
10 medium strawberries
Preheat oven to 350 F
Rinse chickpeas thoroughly and pick out as many loose skins as possible. Process in food processor. Mix until beans are completely smashed.
Add the eggs and mix for a few seconds.
Add sugar , baking powder, vanilla and cardamom and mix for a few seconds.
Add melted chocolate and mix well so that all ingredients are incorporated.
Gently pour into a spring form pan which has the bottom lined with parchment paper and the side are sprayed with oil.
Bake for 40 minutes or until a tooth pick comes out clean. Allow to sit in the pan for 10 minutes then carefully remove and allow to cool on a rack.
Clean and cut the strawberries in to slices.
Make ganache by warning cream on low heat and add chocolate and mix until completely melted. Add cardamom and mix.
Spread ganache on cake and decorate with sliced strawberries filling the whole top.
